Unfortunately, the AdminP process doesn't do the name change in the contact list database. Here's how you do it manually.
Have the person log out. Open VPUSERINFO.NSF on your Sametime server. Locate the persons NEW name document in the Storage view and delete it. Locate the person's OLD name document, open and edit it. Type in the new name of the person. Save and close.
When the person logs in again, they should have their list restored.
You, and your Notes Administrators, should probably add this as a final step in the rename process.
